Bonzai Pipeline Tacos

Ingredients

  • 1 pound boneless, skinless, chicken breast, diced
  • 1 (20-ounce) can crushed pineapple in juice
  • 1 cup Mr. Yoshida’s teriyaki sauce
  • 2 jalapenos, deseeded and diced
  • 1 red onion, diced
  • 1 green bell pepper, cut into ½-inch slices
  • 12 (5-inch diameter) flour tortillas
  • 1 bunch cilantro, roughly chopped
  • Salt, pepper, and granulated garlic, to taste
  • Olive oil, for the griddle

Directions

  1. Preheat the Blackstone griddle to high heat. When heated, coat the griddle top with light layer of olive oil. Drop diced chicken on one zone of the hot griddle top. Lightly season with granulated garlic, salt, and black pepper.
  2. Drop jalapeno, onions, and green pepper onto another zone of the hot griddle top. Season with Salt. Drop crushed pineapple onto separate zone of the hot griddle top.
  3. Cook all items for 10-15 minutes while mixing and flipping all ingredients with spatulas. All ingredients should be fully cooked and slightly charred.
  4. Turn griddle to low heat then add Mr. Yoshida's sauce and mix all ingredients on griddle top together with spatulas.
  5. Warm tortillas on griddle top until golden brown.
  6. Fill each tortilla with an equal amount of hot mixed ingredients. Garnish with fresh, chopped cilantro to taste.
