This recipe is optimized for griddles with a side burner.

- 2 Tablespoons of Butter
- 2 Tablespoons of Sugar
- 2 Teaspoons of Cinnamon
- 1 Teaspoon of Vanilla Extract
- 1/3 Cup of Orange Juice (low or no pulp preferred)
- 2 Cups of Fresh Cherries (pitted)
- 2/3 Cup of White Rum
- Vanilla Ice Cream

Place a skillet on the Blackstone Tailgater burner or Range Top Combo side burner. Turn the burner to low. Add butter, sugar, cinnamon, vanilla extract, orange juice, and cherries.

Mix ingredients and bring to a simmer and cook for 4-5 minutes or until the mixture has reduced by half.

Add 1/4 cup rum.

Tilt skillet, allowing burner flame to ignite rum in skillet or simply use a lighter to ignite (flambe) the rum.

Allow the flambe to continue for 5-10 seconds before giving the ingredients a few final stirs and cook for another 3-4 minutes or until the sauce has reduced by half.

Pour the cherries and sauce over scoops of vanilla ice cream.

Top with a light dusting of cinnamon, if desired. Enjoy!
