CJ’s Bacon and Chicken Caesar Pita Pockets

Ingredients

  • Chicken Cutlets
  • Thick Cut Bacon
  • Romaine Lettuce or Iceberg
  • Cherry Tomatoes
  • Banana Peppers
  • Parmesan Cheese
  • Pita Pocket Bread
  • Caesar Dressing
  • Blackstone Italian Sear & Serve Sauce

Directions 

  1. Preheat griddle to medium. When warm, add 4 strips of bacon.
  2. Next, add some olive oil to the griddle and place two chicken cutlets in the olive oil to cook. Be sure to check your bacon and flip occasionally when needed as well as your chicken cutlets. The bacon should take about 5 mins and your chicken is a total of about 8-10 mins. Depending on the size of cutlets you use.
  3. While your chicken and bacon is cooking you can slice up your romaine lettuce and cherry tomatoes. I prefer to cut the top inch or two off the romaine. It doesn't have much texture, but this is optional. Chop your lettuce up so it can easily fit in the pita pocket and add it to a large mixing bowl. Chop your cherry tomatoes to your preference, but I usually half or quarter them and add them to the bowl. 
  4. While your chicken and bacon is cooking you can shred your fresh parmesan cheese. Shred enough to add 1/2 a cup to your bowl and have some set aside for a garish at the end. Also grab your pita bread and slice them in half. You’ll find pita bread at the store to be round. For this recipe just cut it in half and gently open up the pita bread to make the “pocket”.
  5. Once your chicken is done you can remove them from the griddle top as well as remove your bacon and drain on paper towels. While your bacon drains and cools you can dice up your chicken into small bites, add two pinches or so of salt and pepper as well as a healthy dusting of your Blackstone Parmesan Ranch Seasoning and mix up to incorporate the seasonings and add it to the bowl. Once the bacon is drained give it a chop into small pieces. You can add this to your bowl, but I prefer to use it as a garnish at the end. It just makes for a fun presentation.
  6. With all your ingredients in the bowl add a desired amount of Caesar dressing and about half as much of the Loaded Italian Sear and Serve sauce to the bowl and mix till all ingredients are coated with the dressings.
  7. Grab your Blackstone Taco track, fill each pita pocket with the mixed ingredients from your bowl, add those to your taco rack, top with bacon bits, some more of your fresh grated parmesan and a final "Post Dusting" of your Blackstone Parmesan Ranch Seasoning.
  8. One final step, I like to add a little bit of the Loaded Italian Sear and Serve to a small bowl for an extra dipping sauce and you're all set. Enjoy!
