- 4 Salmon Fillets (6 oz. each, skin on)
- 1/4 Cup of Honey
- 1/4 Cup of Soy Sauce
- 2 Limes
- 2 Tablespoons of Dijon Mustard
- 2 Tablespoons of Water
- Salt & Pepper to taste
- Olive Oil

In a bowl, whisk together honey, soy sauce, juice from 2 limes, mustard, and water. Set aside.

Preheat the griddle to medium heat.

Check the salmon fillets for pin bones and remove any you find.

Coat the fillets with a little oil and season with salt and pepper.

Cook the salmon on each side for about 3 minutes (more or less depending on how thick your fillets are).

When the fillets are about 90% done, pour the honey soy glaze over them and let the sauce reduce for a minute. Move the sauce around with your spatula to evenly reduce it.

Remove the fillets and the sauce from the heat and serve with steamed asparagus.
