Ingredients
- 4 Scrapple Slices
- Salt and Black Pepper (to Taste)
- 1 Cup of Red, Yellow, and Green Pepper (Diced)
- 2 Vidalia Onions (Diced)
- 2 Tablespoons of Butter
- 8 Eggs
- Pizza Dough (Unit)
- 1 Cup of Cheddar Cheese (Shredded)
- 2 Tablespoons of Scallions (for Garnish)

Preheat Griddle to Medium/High and coat with oil.

Place Peppers and Onions on griddle and cook until softened but still with a slight crunch.

Brown scrapple slices for 5 minutes, without turning. Once slices have browned on one side, turn and begin breaking into pieces using Blackstone spatula.

Add black pepper to taste and cook for an additional 5 minutes. Set aside.

In a bowl, whisk eggs and add salt. On a clean surface over medium heat, add eggs to griddle and scramble until cooked through.

Using a dash of flour, spread out pizza dough in a very thin rectangle (can make 2 out of one unit of dough). Spread the scrambled eggs in an even layer over the crust and then add peppers, onions, and scrapple.

Finish with Cheddar Cheese and place on griddle over medium heat until crust is golden brown. To melt the cheese, place a basting dome or tin buffet pan over the pizza to steam. Top with scallions (optional).
