Spicy Pork Noodles

Spicy Pork Noodles

Ingredients

  • 1 (14-ounce) package Pad Thai rice noodles
  • 1 pound ground pork
  • 3-4 cloves garlic, smashed
  • 8 ounces chili garlic sauce
  • 1 bunch green onions
  • Sesame oil, for the griddle
  • Toasted sesame seeds, to taste

Directions

  1. Thinly slice the green onions, separate the green tops from the white bottoms and set aside. 
  2. Bring a large pot of water to a boil. In a large bowl, add rice noodles and cover completely with boiling water. Let sit for 5 minutes or until the noodles have softened. Use a fork or tongs to separate noodles to ensure they do not stick together.
  3. Preheat your griddle to medium. Add a small drizzle of sesame oil and the ground pork. Using either spatulas or a griddle scraper, chop up the pork so it cooks evenly.
  4. When the pork is almost cooked through, add the garlic and the whites from the green onions. Let cook for 1-2 minutes. 
  5. Add a tablespoon or two of the chili garlic sauce and a ladle of the starchy rice water from the noodles. Toss to coat the pork, the chili garlic sauce and rice water will begin to create a glossy sauce.
  6. Drain and add noodles to the pork. Toss pork and noodles together adding more sauce and rice water as needed to create enough sauce and heat as preferred. Do not discard rice water until desired consistency is reached, as it will help create your sauce.
  7. Mix in sesame seeds and 1/3 of your sliced green onions, an extra drizzle of sesame oil and then plate. Serve with extra green onions, sesame seeds, sesame oil and chili sauce.
